Ingredients

  • 25 lbs muscadine grapes
  • 10 lbs sugar
  • 5 gallons water
  • 5 campden tablets
  • 1 packet wine yeast

Instructions

  1. Wash the muscadine grapes thoroughly and remove any stems or debris.
  2. Crush the grapes in a large container to release the juice.
  3. Dissolve the sugar in the water to create a simple syrup.
  4. Add the crushed grapes and the simple syrup to a clean, sanitized fermentation vessel.
  5. Crush the campden tablets and add them to the mixture to kill off any wild yeast or bacteria.
  6. Sprinkle the wine yeast over the top of the mixture and cover the vessel with a clean cloth or lid with an airlock.
  7. Allow the mixture to ferment for 7-10 days, stirring daily to submerge the grape skins.
  8. After primary fermentation, strain the liquid from the solids and transfer it to a clean vessel for secondary fermentation.
  9. Seal the vessel and allow the wine to ferment for an additional 3-4 weeks, or until fermentation ceases and the wine clears.
  10. Bottle the wine and age it for at least 6 months before enjoying.
