Aab Gosht (आब गोश्त)
आब गोश्त (Aab Gosht) is a traditional Kashmiri dish known for its rich and flavorful gravy. It is a slow-cooked mutton dish that is perfect for special occasions and gatherings.
Ingredients
- Mutton - 500g
- Onions - 2, finely sliced
- Yogurt - 1 cup
- Ginger-garlic paste - 2 tbsp
- Red chili powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Fennel powder - 1 tsp
- Dry ginger powder - 1/2 tsp
- Asafoetida - a pinch
- Salt - to taste
- Mustard oil - 4 tbsp
- Water - 2 cups
Instructions
- Heat mustard oil in a heavy-bottomed pan.
- Add sliced onions and sauté until golden brown.
- Add mutton pieces and cook until they change color.
- Add ginger-garlic paste, red chili powder, turmeric powder, fennel powder, dry ginger powder, asafoetida, and salt. Cook for 5 minutes.
- Whisk yogurt and add it to the mutton. Cook for another 5 minutes.
- Add water, cover the pan, and simmer for 45-50 minutes or until the mutton is tender.
- Adjust the seasoning and serve hot.
