Aab Gosht (आब गोश्त)

Ingredients

  • Mutton - 500g
  • Onions - 2, finely sliced
  • Yogurt - 1 cup
  • Ginger-garlic paste - 2 tbsp
  • Red chili powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Fennel powder - 1 tsp
  • Dry ginger powder - 1/2 tsp
  • Asafoetida - a pinch
  • Salt - to taste
  • Mustard oil - 4 tbsp
  • Water - 2 cups

Instructions

  1. Heat mustard oil in a heavy-bottomed pan.
  2. Add sliced onions and sauté until golden brown.
  3. Add mutton pieces and cook until they change color.
  4. Add ginger-garlic paste, red chili powder, turmeric powder, fennel powder, dry ginger powder, asafoetida, and salt. Cook for 5 minutes.
  5. Whisk yogurt and add it to the mutton. Cook for another 5 minutes.
  6. Add water, cover the pan, and simmer for 45-50 minutes or until the mutton is tender.
  7. Adjust the seasoning and serve hot.
