Aam Chutney (zesty Mango Chutney)

Ingredients

  • 2 raw mangoes, peeled and diced
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon red chili powder
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon fenugreek seeds
  • 1/4 cup vinegar
  • 1/4 cup water

Instructions

  1. In a large saucepan, combine diced mangoes, sugar, salt, red chili powder, roasted cumin powder, ground ginger, cloves, cinnamon, mustard seeds, fenugreek seeds, vinegar, and water.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 15-20 minutes, stirring occasionally, until the mangoes are soft and the chutney thickens.
  3. Remove from heat and let the chutney cool to room temperature.
  4. Transfer the chutney to sterilized jars and store in the refrigerator.
