Aam Chutney (zesty Mango Chutney)
Aam Chutney, also known as Zesty Mango Chutney, is a popular condiment in Indian cuisine. This tangy and spicy chutney is made with raw mangoes and a blend of aromatic spices, making it a perfect accompaniment to various dishes.
Ingredients
- 2 raw mangoes, peeled and diced
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon red chili powder
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon fenugreek seeds
- 1/4 cup vinegar
- 1/4 cup water
Instructions
- In a large saucepan, combine diced mangoes, sugar, salt, red chili powder, roasted cumin powder, ground ginger, cloves, cinnamon, mustard seeds, fenugreek seeds, vinegar, and water.
- Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 15-20 minutes, stirring occasionally, until the mangoes are soft and the chutney thickens.
- Remove from heat and let the chutney cool to room temperature.
- Transfer the chutney to sterilized jars and store in the refrigerator.
