Aam Ka Achaar (tangy Mango Pickle)
Aam Ka Achaar, or Tangy Mango Pickle, is a popular condiment in Navyath Muslim Cuisine. This spicy and tangy pickle is made with raw mangoes and a blend of aromatic spices, perfect for adding a burst of flavor to any meal.
Ingredients
- 3 raw mangoes, peeled and diced
- 1/4 cup mustard oil
- 2 tbsp fenugreek seeds
- 1 tbsp fennel seeds
- 1/2 tsp turmeric powder
- 2 tbsp red chili powder
- Salt to taste
Instructions
- In a large bowl, combine the diced mangoes with salt and turmeric powder. Mix well and set aside for 15 minutes.
- Heat mustard oil in a pan over medium heat. Add fenugreek seeds and fennel seeds, and sauté until they start to crackle.
- Add the red chili powder to the pan and sauté for a minute.
- Add the mango mixture to the pan and cook for 5-7 minutes, stirring occasionally, until the mangoes are tender.
- Remove from heat and let the pickle cool to room temperature before transferring it to a clean, dry jar.
- Store in a cool, dark place for a few days before consuming to allow the flavors to develop.
