Aam Kesar Kheer (mango Saffron Rice Pudding)
Aam Kesar Kheer is a delicious and creamy rice pudding infused with the flavors of ripe mango and aromatic saffron. This traditional East Indian dessert is a perfect way to enjoy the sweetness of mangoes in a rich and comforting dessert.
Ingredients
- 1 cup basmati rice
- 4 cups whole milk
- 1 cup ripe mango puree
- 1/2 cup sugar
- 1/4 teaspoon saffron strands
- 1/4 cup chopped nuts (almonds, pistachios, cashews)
- 1 teaspoon cardamom powder
Instructions
- In a heavy-bottomed pan, bring the milk to a boil.
- Wash the basmati rice and add it to the boiling milk.
- Simmer the rice and milk mixture on low heat, stirring occasionally, until the rice is cooked and the mixture thickens.
- Add the ripe mango puree, sugar, and saffron strands to the pan and mix well.
- Cook for another 5-7 minutes, stirring continuously.
- Once the kheer reaches the desired consistency, remove it from the heat and stir in the chopped nuts and cardamom powder.
- Let the kheer cool to room temperature before refrigerating it for at least 2 hours.
- Serve the Aam Kesar Kheer chilled, garnished with additional chopped nuts and saffron strands.
