Aam Kesar Kheer (mango Saffron Rice Pudding)

Ingredients

  • 1 cup basmati rice
  • 4 cups whole milk
  • 1 cup ripe mango puree
  • 1/2 cup sugar
  • 1/4 teaspoon saffron strands
  • 1/4 cup chopped nuts (almonds, pistachios, cashews)
  • 1 teaspoon cardamom powder

Instructions

  1. In a heavy-bottomed pan, bring the milk to a boil.
  2. Wash the basmati rice and add it to the boiling milk.
  3. Simmer the rice and milk mixture on low heat, stirring occasionally, until the rice is cooked and the mixture thickens.
  4. Add the ripe mango puree, sugar, and saffron strands to the pan and mix well.
  5. Cook for another 5-7 minutes, stirring continuously.
  6. Once the kheer reaches the desired consistency, remove it from the heat and stir in the chopped nuts and cardamom powder.
  7. Let the kheer cool to room temperature before refrigerating it for at least 2 hours.
  8. Serve the Aam Kesar Kheer chilled, garnished with additional chopped nuts and saffron strands.
