Ingredients
- 2 ripe mangoes, peeled and diced
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions
- In a large pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Stir in the turmeric, coriander powder, and red chili powder. Cook for a minute to toast the spices.
- Add the diced mangoes and cook for 2-3 minutes, allowing them to soften.
- Pour in the coconut milk and season with salt. Simmer for 10-15 minutes, allowing the flavors to meld together.
- Garnish with fresh cilantro and serve hot with steamed rice or naan.
