Aatu Kari Biryani (chettinad Mutton Biryani)

Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice
  • 4 onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup yogurt
  • 4 green chilies, slit
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 1/2 cup ghee
  • 1/4 cup oil
  • 2 cinnamon sticks
  • 4 cardamom pods
  • 6 cloves
  • 1 teaspoon fennel seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 tablespoon biryani masala
  • Salt to taste
  • 4 cups water

Instructions

  1. Wash and soak the basmati rice in water for 30 minutes. Drain and set aside.
  2. Heat ghee and oil in a large pot. Add cinnamon, cardamom, cloves, fennel seeds, and cumin seeds. Sauté until fragrant.
  3. Add the sliced onions and sauté until golden brown.
  4. Next, add the mutton pieces and cook until they are browned on all sides.
  5. Stir in the chopped tomatoes, green chilies, mint leaves, and coriander leaves. Cook for a few minutes.
  6. Now, add the yogurt, turmeric powder, red chili powder, biryani masala, and salt. Mix well and cook for 5 minutes.
  7. Layer the soaked rice over the mutton mixture in the pot. Pour 4 cups of water over the rice.
  8. Cover the pot and cook on low heat for 20-25 minutes, or until the rice and mutton are fully cooked.
  9. Once done, gently fluff the biryani with a fork and serve hot.
