Aatu Kari Biryani (chettinad Mutton Biryani)
Aatu Kari Biryani, also known as Chettinad Mutton Biryani, is a flavorful and aromatic dish from the Chettinad cuisine of Tamil Nadu, India. This biryani is known for its rich and spicy flavors, making it a favorite among biryani lovers.
Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice
- 4 onions, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 4 green chilies, slit
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 1/2 cup ghee
- 1/4 cup oil
- 2 cinnamon sticks
- 4 cardamom pods
- 6 cloves
- 1 teaspoon fennel seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon biryani masala
- Salt to taste
- 4 cups water
Instructions
- Wash and soak the basmati rice in water for 30 minutes. Drain and set aside.
- Heat ghee and oil in a large pot. Add cinnamon, cardamom, cloves, fennel seeds, and cumin seeds. Sauté until fragrant.
- Add the sliced onions and sauté until golden brown.
- Next, add the mutton pieces and cook until they are browned on all sides.
- Stir in the chopped tomatoes, green chilies, mint leaves, and coriander leaves. Cook for a few minutes.
- Now, add the yogurt, turmeric powder, red chili powder, biryani masala, and salt. Mix well and cook for 5 minutes.
- Layer the soaked rice over the mutton mixture in the pot. Pour 4 cups of water over the rice.
- Cover the pot and cook on low heat for 20-25 minutes, or until the rice and mutton are fully cooked.
- Once done, gently fluff the biryani with a fork and serve hot.
