Ingredients

  • 1 cup Arborio rice
  • 2 cups chicken or vegetable broth

Instructions

  1. In a saucepan, bring the broth to a simmer.
  2. In another large saucepan, sauté the onion and garlic until translucent.
  3. Add the Arborio rice to the onion and garlic, stirring to coat the rice with the oil.
  4. Add a ladleful of the hot broth to the rice and cook, stirring constantly, until the liquid is absorbed.
  5. Continue adding the broth, one ladleful at a time, and stirring constantly until the rice is creamy and tender.
  6. Remove the rice from the heat and stir in the Parmesan cheese, abalone, salt, and pepper.
  7. Let the mixture cool, then shape it into small balls, about the size of a golf ball.
  8. Dip each ball into the flour, then the beaten eggs, and finally the bread crumbs, ensuring they are fully coated.
  9. In a deep saucepan, heat the vegetable oil and fry the arancini balls until golden brown.
  10. Remove the arancini from the oil and place them on a paper towel to drain excess oil.
  11. Serve the abalone arancini hot with your favorite dipping sauce.
