Ingredients

  • 1 cup jasmine rice
  • 6 cups chicken broth
  • 2 fresh abalones, cleaned and sliced

  • 1 tablespoon Shaoxing wine
  • Salt, to taste
  • White pepper, to taste
  • 2 green onions, thinly sliced

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the jasmine rice and reduce the heat to a simmer. Cook for 30 minutes, stirring occasionally.
  3. Add the sliced abalone, ginger, and garlic to the pot. Continue to simmer for another 20 minutes, or until the congee reaches a smooth and creamy consistency.
  4. Stir in the Shaoxing wine and season with salt and white pepper to taste.
  5. Divide the congee into serving bowls and garnish with sliced green onions.
