Ingredients
- 12 egg yolks
- 500g granulated sugar
- 200ml water
- 1 cinnamon stick
- Peel of 1 lemon
- 100g pork fat (or lard)
Instructions
- In a saucepan, combine the sugar, water, cinnamon stick, and lemon peel. Bring to a boil and simmer for 2-3 minutes to create a syrup. Remove from heat and let it cool.
- Preheat the oven to 180°C (350°F).
- In a separate bowl, beat the egg yolks until smooth.
- Add the cooled syrup to the egg yolks and mix well.
- Strain the mixture through a fine sieve to remove any solids.
- Grease a pudding mold with the pork fat (or lard).
- Pour the mixture into the mold and place it in a deep baking tray. Fill the tray with hot water to create a water bath.
- Bake for 1 hour or until the pudding is set and golden on top.
- Remove from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours or overnight before serving.
