Ingredients

  • 12 egg yolks
  • 500g granulated sugar
  • 200ml water

  • 100g pork fat (or lard)

Instructions

  1. In a saucepan, combine the sugar, water, cinnamon stick, and lemon peel. Bring to a boil and simmer for 2-3 minutes to create a syrup. Remove from heat and let it cool.
  2. Preheat the oven to 180°C (350°F).
  3. In a separate bowl, beat the egg yolks until smooth.
  4. Add the cooled syrup to the egg yolks and mix well.
  5. Strain the mixture through a fine sieve to remove any solids.
  6. Grease a pudding mold with the pork fat (or lard).
  7. Pour the mixture into the mold and place it in a deep baking tray. Fill the tray with hot water to create a water bath.
  8. Bake for 1 hour or until the pudding is set and golden on top.
  9. Remove from the oven and let it cool to room temperature.
  10. Refrigerate for at least 4 hours or overnight before serving.
