Aberarth Almond Biscotti
Aberarth Almond Biscotti is a traditional Ceredigion treat that is perfect for dipping into a cup of tea or coffee. This crunchy almond biscuit is twice-baked to achieve the perfect texture and flavor.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon almond extract
- 1 cup whole almonds, toasted and coarsely chopped
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and almond extract together. Gradually add the egg mixture to the dry ingredients, mixing until a dough forms.
- Stir in the chopped almonds until evenly distributed in the dough.
- Divide the dough in half. Shape each half into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, and flatten slightly.
- Bake for 25 minutes, or until the logs are firm to the touch and lightly browned.
- Remove the logs from the oven and let them cool for 10 minutes. Reduce the oven temperature to 325°F (165°C).
- Using a serrated knife, slice the logs diagonally into 1/2 inch thick slices. Place the slices cut side down on the baking sheet.
- Bake for an additional 15 minutes, or until the biscotti are golden and crisp.
- Let the biscotti cool completely on a wire rack before serving.
