Abidjan Sunrise (Levantine-inspired shakshuka)
Shakshuka is a popular Levantine and North African dish featuring poached eggs in a spicy tomato and pepper sauce. This Ivorian twist on the classic dish, known as Abidjan Sunrise, incorporates local flavors and ingredients for a unique and delicious meal.
Ingredients
- 4 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 red bell peppers, diced
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 can (28 oz) crushed tomatoes
- Salt and pepper to taste
- 8 large eggs
- 1/4 cup chopped parsley
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the red bell peppers, cumin, paprika, and cayenne pepper. Cook for 5 minutes, until the peppers are softened.
- Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10 minutes, until the sauce has thickened slightly.
- Make 8 wells in the sauce and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, until the egg whites are set but the yolks are still runny.
- Sprinkle with chopped parsley and serve hot.
