Abidjan Sunrise (Levantine-inspired shakshuka)

Ingredients

  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 red bell peppers, diced
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (28 oz) crushed tomatoes
  • Salt and pepper to taste
  • 8 large eggs
  • 1/4 cup chopped parsley

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and cook for another minute.
  3. Stir in the red bell peppers, cumin, paprika, and cayenne pepper. Cook for 5 minutes, until the peppers are softened.
  4. Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10 minutes, until the sauce has thickened slightly.
  5. Make 8 wells in the sauce and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, until the egg whites are set but the yolks are still runny.
  6. Sprinkle with chopped parsley and serve hot.
