Ingredients
- 2 cups chopped tomatoes
- 1 cup diced onions
- 1 cup chopped bell peppers
- 1 cup sliced carrots
- 1 cup chopped cabbage
- 1 cup vegetable broth
- 1 cup cooked black-eyed peas
- 1 tablespoon tomato paste
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon paprika
- 1 teaspoon curry powder
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
- Add the tomatoes, tomato paste, paprika, and curry powder. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a simmer.
- Add the bell peppers, carrots, and cabbage. Cook for 15 minutes, or until the vegetables are tender.
- Stir in the black-eyed peas and season with salt and pepper. Simmer for an additional 10 minutes.
- Adjust the seasoning if needed, then remove from heat.
