Ingredients

  • 2 cups chopped tomatoes

  • 1 cup chopped cabbage
  • 1 cup vegetable broth
  • 1 cup cooked black-eyed peas
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
  2. Add the tomatoes, tomato paste, paprika, and curry powder. Cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the bell peppers, carrots, and cabbage. Cook for 15 minutes, or until the vegetables are tender.
  5. Stir in the black-eyed peas and season with salt and pepper. Simmer for an additional 10 minutes.
  6. Adjust the seasoning if needed, then remove from heat.
