Ingredients
- 12 small buns or dinner rolls
- 1 cup dried black-eyed peas, soaked overnight
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground red pepper
- Salt to taste
- Vegetable oil for frying
- 1 ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Drain and rinse the soaked black-eyed peas. In a food processor, blend the peas, onion, garlic, ginger, red pepper, and salt until smooth.
- Form the pea mixture into small patties and fry in hot oil until golden brown and cooked through.
- In a bowl, combine the diced mango, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the mango salsa.
- Slice the buns in half and fill each with a black-eyed pea patty and a spoonful of mango salsa.
