Acarajé Sliders with Mango Salsa (Mini Sanduíches de Acarajé com Salsa de Manga)

Ingredients

  • 12 small buns or dinner rolls
  • 1 cup dried black-eyed peas, soaked overnight
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground red pepper
  • Salt to taste
  • Vegetable oil for frying
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked black-eyed peas. In a food processor, blend the peas, onion, garlic, ginger, red pepper, and salt until smooth.
  2. Form the pea mixture into small patties and fry in hot oil until golden brown and cooked through.
  3. In a bowl, combine the diced mango, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the mango salsa.
  4. Slice the buns in half and fill each with a black-eyed pea patty and a spoonful of mango salsa.
