Accra (spiced Saltfish Fritters)

Ingredients
- 1 cup saltfish, boiled and flaked
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 1 scotch bonnet pepper, finely chopped
- 1 teaspoon baking powder
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup water
- Oil for frying
Instructions
- In a large bowl, mix together the saltfish, flour, onion, scotch bonnet pepper, baking powder, thyme, black pepper, and paprika.
- Add water gradually to form a thick batter.
- Heat oil in a deep pan over medium heat.
- Spoon the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
- Serve hot and enjoy!
