Ingredients

  • 1 cup saltfish, boiled and flaked
  • 1 cup all-purpose flour
  • 1 small onion, finely chopped
  • 1 scotch bonnet pepper, finely chopped
  • 1 teaspoon baking powder
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup water
  • Oil for frying

Instructions

  1. In a large bowl, mix together the saltfish, flour, onion, scotch bonnet pepper, baking powder, thyme, black pepper, and paprika.
  2. Add water gradually to form a thick batter.
  3. Heat oil in a deep pan over medium heat.
  4. Spoon the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  5. Remove the fritters from the oil and drain on paper towels.
  6. Serve hot and enjoy!
