Accras De Banane (spicy Plantain Fritters)
Accras de Banane, or Spicy Plantain Fritters, are a popular snack in Martinican cuisine. These fritters are crispy on the outside and soft on the inside, with a delicious blend of sweet and spicy flavors.
Ingredients
- 2 ripe plantains, mashed
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 1 scotch bonnet pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon baking powder
- 1 teaspoon thyme, chopped
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 cup water
- Oil for frying
Instructions
- In a large bowl, mix together the mashed plantains, flour, onion, scotch bonnet pepper, garlic, baking powder, thyme, paprika, and salt.
- Gradually add water to the mixture, stirring until you have a thick batter.
- Heat oil in a deep pan over medium heat.
- Spoon the batter into the hot oil, forming small fritters, and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- Serve the accras de banane hot and enjoy!
