Accras De Banane (spicy Plantain Fritters)

Ingredients

  • 2 ripe plantains, mashed
  • 1 cup all-purpose flour
  • 1 small onion, finely chopped
  • 1 scotch bonnet pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon baking powder
  • 1 teaspoon thyme, chopped
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 cup water
  • Oil for frying

Instructions

  1. In a large bowl, mix together the mashed plantains, flour, onion, scotch bonnet pepper, garlic, baking powder, thyme, paprika, and salt.
  2. Gradually add water to the mixture, stirring until you have a thick batter.
  3. Heat oil in a deep pan over medium heat.
  4. Spoon the batter into the hot oil, forming small fritters, and fry until golden brown, about 3-4 minutes per side.
  5. Remove the fritters from the oil and place them on a paper towel to drain excess oil.
  6. Serve the accras de banane hot and enjoy!
