Ingredients

  • 1 lb salted cod, soaked and flaked

  • 1 scotch bonnet pepper, finely chopped
  • 1/4 cup chopped parsley
  • 1/4 cup chopped chives
  • 1 tsp baking powder
  • 1/2 cup water
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the flaked salted cod, flour, onion, garlic, scotch bonnet pepper, parsley, chives, and baking powder.
  2. Add water gradually to form a thick batter. Season with salt and pepper to taste.
  3. Heat vegetable oil in a deep pot or skillet over medium heat.
  4. Scoop spoonfuls of the batter and carefully drop them into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the fritters from the oil and drain on paper towels.
