Ingredients
- 1 lb salted cod, soaked and flaked
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped
- 1/4 cup chopped parsley
- 1/4 cup chopped chives
- 1 tsp baking powder
- 1/2 cup water
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a large bowl, combine the flaked salted cod, flour, onion, garlic, scotch bonnet pepper, parsley, chives, and baking powder.
- Add water gradually to form a thick batter. Season with salt and pepper to taste.
- Heat vegetable oil in a deep pot or skillet over medium heat.
- Scoop spoonfuls of the batter and carefully drop them into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
- Serve the accras de morue hot with a side of sauce or dip of your choice.
