Accras de Morue, also known as Saltfish Accras, is a popular dish in Saint Lucian cuisine. These delicious saltfish fritters are perfect as a snack or appetizer.
Ingredients
- 1 cup salted cod, soaked and flaked
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 1 scallion, finely chopped
- 1 hot pepper, finely chopped
- 1/2 teaspoon baking powder
- 1/2 cup water
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- In a bowl, mix the salted cod, flour, onion, scallion, hot pepper, and baking powder.
- Add water gradually to form a thick batter.
- Season with black pepper and mix well.
- Heat oil in a deep pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown.
- Remove from the oil and drain on paper towels.
- Serve hot and enjoy!
