- 1 kg beef, cubed
- 2 onions, chopped
- 4 cloves garlic, minced

- 4 kaffir lime leaves
- 1-inch galangal, sliced
- 1-inch ginger, sliced
- 1 cinnamon stick
- 4 cups beef broth
- 2 cups coconut milk
- Salt to taste
- Sugar to taste
- Fried shallots for garnish
Instructions
- In a large pot, sauté the onions and garlic until fragrant.
- Add the beef and cook until browned.
- Stir in the tomatoes, red chilies, lemongrass, kaffir lime leaves, galangal, ginger, and cinnamon stick.
- Pour in the beef broth and simmer for 1.5 hours until the beef is tender.
- Add the coconut milk, salt, and sugar. Simmer for another 30 minutes.
- Adjust the seasoning if needed.
