Ingredients

  • 1 kg beef, cubed
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 red chilies, sliced
  • 2 lemongrass stalks, smashed
  • 4 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1-inch ginger, sliced
  • 1 cinnamon stick
  • 4 cups beef broth
  • 2 cups coconut milk
  • Salt to taste
  • Sugar to taste
  • Fried shallots for garnish

Instructions

  1. In a large pot, sauté the onions and garlic until fragrant.
  2. Add the beef and cook until browned.
  3. Stir in the tomatoes, red chilies, lemongrass, kaffir lime leaves, galangal, ginger, and cinnamon stick.
  4. Pour in the beef broth and simmer for 1.5 hours until the beef is tender.
  5. Add the coconut milk, salt, and sugar. Simmer for another 30 minutes.
  6. Adjust the seasoning if needed.
  7. Serve the Acehnese Beef Soup hot, garnished with fried shallots.
