Ingredients
- 1 1/2 lbs beef stew meat, cut into chunks
- 3 large potatoes, peeled and cubed
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 3 kaffir lime leaves
- 1-inch galangal, sliced
- 1-inch ginger, sliced
- 1 cinnamon stick
- 4 cups beef broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, red chilies, lemongrass, galangal, ginger, and cinnamon stick. Sauté until fragrant.
- Add the beef stew meat to the pot and brown on all sides.
- Pour in the beef broth and add the kaffir lime leaves. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender.
- Add the potatoes and tomatoes to the pot. Continue to simmer for another 30-40 minutes, or until the potatoes are cooked through.
- Season the stew with salt and pepper to taste. Remove the lemongrass stalk and cinnamon stick before serving.
