Acehnese Beef Stew With Potatoes

Ingredients

  • 1 1/2 lbs beef stew meat, cut into chunks
  • 3 large potatoes, peeled and cubed
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 red chilies, sliced
  • 1 lemongrass stalk, bruised
  • 3 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1-inch ginger, sliced
  • 1 cinnamon stick
  • 4 cups beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, red chilies, lemongrass, galangal, ginger, and cinnamon stick. Sauté until fragrant.
  2. Add the beef stew meat to the pot and brown on all sides.
  3. Pour in the beef broth and add the kaffir lime leaves. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender.
  4. Add the potatoes and tomatoes to the pot. Continue to simmer for another 30-40 minutes, or until the potatoes are cooked through.
  5. Season the stew with salt and pepper to taste. Remove the lemongrass stalk and cinnamon stick before serving.
