Acehnese Spiced Chicken Skewers

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 2 tbsp Acehnese spice blend
- 2 tbsp coconut milk
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp lime juice
- 1 tsp grated ginger
- 1 tsp minced garlic
- 1/2 tsp turmeric
- Salt to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the Acehnese spice blend, coconut milk, soy sauce, brown sugar, lime juice, ginger, garlic, turmeric, and salt. Mix well to create a marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes onto the soaked wooden skewers.
- Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Remove from the grill and let the skewers rest for a few minutes before serving.
