Acehnese Spiced Chicken Skewers

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 2 tbsp Acehnese spice blend
  • 2 tbsp coconut milk
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp grated ginger
  • 1 tsp minced garlic
  • 1/2 tsp turmeric
  • Salt to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the Acehnese spice blend, coconut milk, soy sauce, brown sugar, lime juice, ginger, garlic, turmeric, and salt. Mix well to create a marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken cubes onto the soaked wooden skewers.
  5. Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
