Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1 cup diced chicken or shrimp
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, finely chopped
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
- Heat the remaining oil in the same pan, then add the diced chicken or shrimp, onion, garlic, and red chilies. Cook until the chicken is no longer pink or the shrimp is opaque.
- Stir in the ground turmeric, coriander, and cumin, and cook for another minute to toast the spices.
- Add the cooked rice to the pan and stir to combine with the other ingredients.
- Pour the soy sauce over the rice and mix well. Season with salt and pepper to taste.
- Finally, add the scrambled eggs back to the pan and stir to distribute evenly.
- Remove from heat and serve the Acehnese Spiced Fried Rice hot.
