Ingredients
- 1 lb beef, thinly sliced
- 8 cups beef broth
- 4 oz rice noodles
- 2 tomatoes, diced

- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp tamarind paste
- 1 tsp sugar
- Salt to taste
- Fresh cilantro and green onions for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, garlic, red chilies, lemongrass, galangal, and ginger. Sauté until fragrant.
- Add the beef slices and cook until browned.
- Pour in the beef broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
- Stir in the soy sauce, fish sauce, tamarind paste, and sugar. Add the tomatoes and continue to simmer for another 15 minutes.
- Cook the rice noodles according to the package instructions.
- To serve, place a portion of cooked rice noodles in a bowl and ladle the hot beef soup over the noodles. Garnish with fresh cilantro and green onions.
