Ingredients

  • 1 lb beef, thinly sliced
  • 8 cups beef broth
  • 4 oz rice noodles
  • 2 tomatoes, diced

  • 2 red chilies, sliced
  • 1 lemongrass stalk, bruised
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp tamarind paste
  • 1 tsp sugar
  • Salt to taste
  • Fresh cilantro and green onions for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, red chilies, lemongrass, galangal, and ginger. Sauté until fragrant.
  2. Add the beef slices and cook until browned.
  3. Pour in the beef broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
  4. Stir in the soy sauce, fish sauce, tamarind paste, and sugar. Add the tomatoes and continue to simmer for another 15 minutes.
  5. Cook the rice noodles according to the package instructions.
  6. To serve, place a portion of cooked rice noodles in a bowl and ladle the hot beef soup over the noodles. Garnish with fresh cilantro and green onions.
