Ingredients
- 2 lbs chicken, cut into pieces
- 3 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 can (14 oz) coconut milk
- 4 shallots, chopped
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 1 inch galangal, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp salt
- 1 tbsp sugar
- 2 tbsp cooking oil
- 4 cups water
Instructions
- Heat cooking oil in a pot over medium heat.
- Add shallots, garlic, red chilies, galangal, turmeric powder, coriander powder, and cumin powder. Sauté until fragrant.
- Add chicken pieces and cook until they change color.
- Pour in the coconut milk and water. Add lemongrass, kaffir lime leaves, salt, and sugar. Stir well.
- Cover the pot and let the curry simmer for 30-40 minutes until the chicken is tender.
- Remove the lemongrass stalks and kaffir lime leaves before serving.
