Acehnese Spicy Chicken Curry With Lemongrass

Ingredients

  • 2 lbs chicken, cut into pieces
  • 3 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 can (14 oz) coconut milk
  • 4 shallots, chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 inch galangal, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 tbsp cooking oil
  • 4 cups water

Instructions

  1. Heat cooking oil in a pot over medium heat.
  2. Add shallots, garlic, red chilies, galangal, turmeric powder, coriander powder, and cumin powder. Sauté until fragrant.
  3. Add chicken pieces and cook until they change color.
  4. Pour in the coconut milk and water. Add lemongrass, kaffir lime leaves, salt, and sugar. Stir well.
  5. Cover the pot and let the curry simmer for 30-40 minutes until the chicken is tender.
  6. Remove the lemongrass stalks and kaffir lime leaves before serving.
