Acehnese Spicy Noodles (mie Aceh)

Ingredients

  • 500g fresh yellow noodles
  • 200g beef, thinly sliced
  • 3 cups beef broth
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 2 tablespoons cooking oil
  • Salt to taste

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced shallots, and red chilies. Sauté until fragrant.
  2. Add the thinly sliced beef and cook until it changes color.
  3. Stir in the turmeric powder, coriander powder, and cumin powder. Mix well to coat the beef.
  4. Pour in the beef broth and add the bruised lemongrass and kaffir lime leaves. Bring to a boil and then reduce the heat to simmer for 20 minutes.
  5. While the broth is simmering, blanch the fresh yellow noodles in a separate pot of boiling water for 2-3 minutes. Drain and set aside.
  6. Once the broth is ready, season with salt to taste. Discard the lemongrass and kaffir lime leaves.
  7. To serve, divide the blanched noodles into serving bowls and ladle the hot and spicy beef broth over the noodles.
  8. Garnish with fresh herbs, fried shallots, and a squeeze of lime juice if desired.
