Ingredients
- 500g fresh yellow noodles
- 200g beef, thinly sliced
- 3 cups beef broth
- 2 stalks lemongrass, bruised
- 3 kaffir lime leaves
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 2 red chilies, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 2 tablespoons cooking oil
- Salt to taste
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced shallots, and red chilies. Sauté until fragrant.
- Add the thinly sliced beef and cook until it changes color.
- Stir in the turmeric powder, coriander powder, and cumin powder. Mix well to coat the beef.
- Pour in the beef broth and add the bruised lemongrass and kaffir lime leaves. Bring to a boil and then reduce the heat to simmer for 20 minutes.
- While the broth is simmering, blanch the fresh yellow noodles in a separate pot of boiling water for 2-3 minutes. Drain and set aside.
- Once the broth is ready, season with salt to taste. Discard the lemongrass and kaffir lime leaves.
- To serve, divide the blanched noodles into serving bowls and ladle the hot and spicy beef broth over the noodles.
- Garnish with fresh herbs, fried shallots, and a squeeze of lime juice if desired.
