Ingredients
- 1 lb shrimp, peeled and deveined
- 8 oz rice noodles
- 4 cups chicken broth
- 1 lemongrass stalk, bruised
- 2 kaffir lime leaves
- 1 inch galangal, sliced
- 3 shallots, sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 tomato, diced
- 1 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 1/4 cup fresh cilantro, chopped
- 2 tbsp cooking oil
- Salt to taste
Instructions
- In a pot, heat the cooking oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Pour in the chicken broth and add the lemongrass, kaffir lime leaves, galangal, and tomato. Bring to a boil.
- Add the tamarind paste, fish sauce, and palm sugar. Stir to combine.
- Reduce the heat to low and let the soup simmer for 15 minutes.
- While the soup is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
- Add the shrimp to the soup and cook for 3-4 minutes until they turn pink and opaque.
- Divide the cooked rice noodles into serving bowls and ladle the hot soup over the noodles.
- Garnish with fresh cilantro and serve hot.
