Acehnese Spicy Shrimp Noodle Soup

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 oz rice noodles
  • 4 cups chicken broth
  • 1 lemongrass stalk, bruised
  • 2 kaffir lime leaves
  • 1 inch galangal, sliced
  • 3 shallots, sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 tomato, diced
  • 1 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. In a pot, heat the cooking oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  2. Pour in the chicken broth and add the lemongrass, kaffir lime leaves, galangal, and tomato. Bring to a boil.
  3. Add the tamarind paste, fish sauce, and palm sugar. Stir to combine.
  4. Reduce the heat to low and let the soup simmer for 15 minutes.
  5. While the soup is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
  6. Add the shrimp to the soup and cook for 3-4 minutes until they turn pink and opaque.
  7. Divide the cooked rice noodles into serving bowls and ladle the hot soup over the noodles.
  8. Garnish with fresh cilantro and serve hot.
