Acehnese Spicy Soup (kuah Pliek)

Ingredients

  • 500g beef, thinly sliced
  • 2 tomatoes, diced
  • 3 shallots, sliced
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 2 green chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp galangal, minced
  • 1 tsp tamarind paste
  • 1 L water
  • Salt to taste

Instructions

  1. In a large pot, bring water to a boil.
  2. Add the beef, tomatoes, shallots, garlic, lemongrass, kaffir lime leaves, green chilies, turmeric powder, and galangal to the pot.
  3. Simmer over medium heat for 45 minutes, or until the beef is tender.
  4. Add tamarind paste and salt to taste. Simmer for an additional 10 minutes.
  5. Remove from heat and serve hot.
