Ingredients

  • 1 lb salted codfish
  • 2 cups canned ackee, drained
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 sprigs thyme
  • 2 scallions, chopped
  • 1 Scotch bonnet pepper, seeded and chopped
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Soak the salted codfish in water overnight to remove excess salt. Drain and flake the fish.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the onion, bell pepper, tomatoes, garlic, thyme, scallions, and Scotch bonnet pepper. Cook until the vegetables are softened.
  3. Add the flaked codfish to the skillet and cook for 5 minutes, stirring occasionally.
  4. Gently fold in the ackee and cook for an additional 5 minutes, being careful not to break up the ackee.
  5. Season with salt and pepper to taste.
