Ackee And Saltfish
Ackee and saltfish is a traditional Jamaican dish that is perfect for breakfast or brunch. It combines the unique flavor of ackee fruit with salted codfish for a delicious and satisfying meal.
Ingredients
- 1 lb salted codfish
- 2 cups canned ackee, drained
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 2 sprigs thyme
- 2 scallions, chopped
- 1 Scotch bonnet pepper, seeded and chopped
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Soak the salted codfish in water overnight to remove excess salt. Drain and flake the fish.
- Heat the vegetable oil in a large skillet over medium heat. Add the onion, bell pepper, tomatoes, garlic, thyme, scallions, and Scotch bonnet pepper. Cook until the vegetables are softened.
- Add the flaked codfish to the skillet and cook for 5 minutes, stirring occasionally.
- Gently fold in the ackee and cook for an additional 5 minutes, being careful not to break up the ackee.
- Season with salt and pepper to taste.
