Ingredients

  • 1 lb ground lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon paprika

  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup plain yogurt
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, mix the ground lamb, onion, garlic, paprika, cumin, cayenne pepper, salt, and pepper until well combined.
  2. Divide the lamb mixture into 4 equal portions and shape each portion into a long, thin kebab shape.
  3. Heat a grill pan or stovetop grill over medium-high heat. Cook the kebabs for 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
  4. While the kebabs are cooking, mix the yogurt, mint, lemon juice, and olive oil in a small bowl to make the yogurt sauce.
  5. Warm the pita breads on the grill for 1-2 minutes on each side.
  6. Place a cooked kebab on each pita bread and top with the yogurt sauce.
  7. Serve the Adana Kebabs with additional yogurt sauce on the side and your favorite salad or grilled vegetables.
