Ingredients

  • 1 cup dried brown lentils, rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Stir and cook for a minute until the spices are fragrant.
  3. Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
  4. Season the soup with salt and pepper to taste.
