Adas Bil Banadurah is a traditional Yemenite spiced lentil and tomato soup that is bursting with flavor. This hearty and comforting soup is a staple in Mizrahi Jewish cuisine and is perfect for a cozy meal on a cold day.
Ingredients
- 1 cup dried brown lentils, rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Stir and cook for a minute until the spices are fragrant.
- Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
- Season the soup with salt and pepper to taste.
- Serve the soup hot, garnished with chopped fresh cilantro.
