Adas Bil Hoot (yemenite Spiced Lentil Soup)
Adas Bil Hoot is a traditional Yemenite spiced lentil soup that is full of flavor and warmth. This hearty soup is a staple in Mizrahi Jewish cuisine and is perfect for a comforting meal on a chilly day.
Ingredients
- 2 cups red lentils
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the cumin, coriander, turmeric, and cayenne pepper to the pot, and cook for 1-2 minutes until fragrant.
- Pour in the vegetable broth and add the rinsed lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with fresh cilantro.
