Ingredients
- 1 cup dried green or brown lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 4 cups vegetable broth
- 1 bunch spinach, chopped
- 1 large tomato, diced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground cumin, ground coriander, and ground turmeric to the pot. Stir and cook for 1-2 minutes until fragrant.
- Rinse the lentils and add them to the pot. Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and let the lentils simmer for 20 minutes.
- Add the chopped spinach and diced tomato to the pot. Stir well and continue to simmer for an additional 15 minutes.
- Season the stew with salt and pepper to taste. Serve hot and enjoy!
