Adas (lainya Lentil Stew)
Adas, also known as Lainya Lentil Stew, is a traditional South Sudanese dish that is hearty, flavorful, and perfect for a comforting meal. This stew is made with lentils, vegetables, and a blend of aromatic spices, creating a delicious and nutritious dish.
Ingredients
- 2 cups dried lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 tomatoes, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are soft and fragrant.
- Add the carrots, tomatoes, cumin, coriander, and turmeric to the pot. Stir well to combine the ingredients.
- Pour in the vegetable broth and add the rinsed lentils. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 1 hour, or until the lentils are tender.
- Once the lentils are cooked, adjust the seasoning if needed. Serve the Adas hot and enjoy!
