Ingredients

  • 2 cups dried lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 tomatoes, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are soft and fragrant.
  3. Add the carrots, tomatoes, cumin, coriander, and turmeric to the pot. Stir well to combine the ingredients.
  4. Pour in the vegetable broth and add the rinsed lentils. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 1 hour, or until the lentils are tender.
  6. Once the lentils are cooked, adjust the seasoning if needed. Serve the Adas hot and enjoy!
