Adas Polo (fragrant Herb And Lentil Stew)

Ingredients
- 2 cups basmati rice
- 1 cup green or brown lentils
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 cup chopped fresh dill
- 1/2 cup chopped fresh cilantro
- Salt and pepper to taste
- 4 cups vegetable broth or water
- 2 tablespoons olive oil
Instructions
- Rinse the rice and soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the minced garlic, turmeric, and cumin to the pot. Cook for 2 minutes until fragrant.
- Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Drain the soaked rice and add it to the pot with the cooked lentils. Stir in the chopped dill and cilantro. Season with salt and pepper.
- Cover the pot and cook for an additional 20 minutes, or until the rice is tender and fluffy.
- Fluff the Adas Polo with a fork and serve hot.
