Ingredients

  • 2 cups basmati rice
  • 1 cup green or brown lentils
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 cup chopped fresh dill
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 4 cups vegetable broth or water
  • 2 tablespoons olive oil

Instructions

  1. Rinse the rice and soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown.
  3. Add the minced garlic, turmeric, and cumin to the pot. Cook for 2 minutes until fragrant.
  4. Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  5. Drain the soaked rice and add it to the pot with the cooked lentils. Stir in the chopped dill and cilantro. Season with salt and pepper.
  6. Cover the pot and cook for an additional 20 minutes, or until the rice is tender and fluffy.
  7. Fluff the Adas Polo with a fork and serve hot.
