Adas Polo (persian Lentil Soup)
Adas Polo is a traditional Persian dish that combines the flavors of lentils, rice, and fragrant spices. This hearty and nutritious soup is a staple in Iranian cuisine, perfect for a comforting meal on a cold day.
Ingredients
- 1 cup lentils
- 1 cup basmati rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp cinnamon
- 4 cups vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse the lentils and rice under cold water, then set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, turmeric, cumin, and cinnamon to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the lentils, rice, and vegetable broth to the pot. Season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for 45-50 minutes, or until the lentils and rice are tender.
- Once the soup is ready, adjust the seasoning if needed and serve hot.
