Ingredients

  • 1 cup lentils
  • 1 cup basmati rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and rice under cold water, then set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, turmeric, cumin, and cinnamon to the pot. Stir and cook for 1-2 minutes until fragrant.
  4. Add the lentils, rice, and vegetable broth to the pot. Season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for 45-50 minutes, or until the lentils and rice are tender.
  5. Once the soup is ready, adjust the seasoning if needed and serve hot.
