Adas Polo (spiced Lentil Soup)

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 4 cups vegetable broth
  • 1 cup basmati rice
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the ground cumin, turmeric, and cinnamon to the pot, and cook for another minute to toast the spices.
  3. Rinse the lentils and add them to the pot, then pour in the vegetable broth. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
  5. While the soup is simmering, cook the basmati rice according to package instructions.
  6. To serve, spoon the spiced lentil soup over the cooked rice and enjoy!
