Adas Polo (spiced Lentil Soup)
Adas Polo is a traditional Tajik dish that features spiced lentil soup served with fragrant rice. This hearty and flavorful soup is a staple in Tajik cuisine, perfect for warming up on a cold day.
Ingredients
- 1 cup lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 4 cups vegetable broth
- 1 cup basmati rice
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the ground cumin, turmeric, and cinnamon to the pot, and cook for another minute to toast the spices.
- Rinse the lentils and add them to the pot, then pour in the vegetable broth. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
- While the soup is simmering, cook the basmati rice according to package instructions.
- To serve, spoon the spiced lentil soup over the cooked rice and enjoy!
