Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 6 cups chicken broth
  • 2 tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
  3. Add the chicken thighs to the pot and brown on all sides, about 5 minutes.
  4. Pour in the chicken broth and add the red lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
  5. Add the diced tomatoes and chopped cilantro to the pot. Simmer for an additional 10 minutes.
  6. Season the soup with salt and pepper to taste. Serve hot and enjoy!
