Adas (sudanese Spiced Chicken And Lentil Soup)
Adas is a flavorful Sudanese spiced chicken and lentil soup that is perfect for warming up on a cold day. This hearty and aromatic soup is packed with protein and rich spices, making it a comforting and satisfying meal.
Ingredients
- 1 lb chicken thighs, boneless and skinless
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 6 cups chicken broth
- 2 tomatoes, diced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
- Add the chicken thighs to the pot and brown on all sides, about 5 minutes.
- Pour in the chicken broth and add the red lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
- Add the diced tomatoes and chopped cilantro to the pot. Simmer for an additional 10 minutes.
- Season the soup with salt and pepper to taste. Serve hot and enjoy!
