Ingredients

  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 tomatoes, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils under cold water and drain.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and garlic, and cook until softened.
  3. Add the tomatoes, cumin, coriander, turmeric, and cayenne pepper. Cook for 2-3 minutes.
  4. Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve the soup hot, garnished with fresh cilantro.
