Adas (sudanese Spiced Lentil And Vegetable Soup)
Adas is a traditional Sudanese soup made with lentils and a variety of vegetables, seasoned with aromatic spices. It's a hearty and flavorful dish that is perfect for a comforting meal.
Ingredients
- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 tomatoes, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and garlic, and cook until softened.
- Add the tomatoes, cumin, coriander, turmeric, and cayenne pepper. Cook for 2-3 minutes.
- Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with fresh cilantro.
