Adas (sudanese Spiced Lentil Soup)
Adas is a traditional Sudanese spiced lentil soup that is both nutritious and flavorful. This hearty soup is a staple in Sudanese cuisine and is often enjoyed with a side of bread or rice.
Ingredients
- 2 cups red lentils, rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- Juice of 1 lemon
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt, pepper, and lemon juice. Adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro.
