Adas (sudanese Spiced Lentil Soup)

Ingredients

  • 2 cups red lentils, rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Add the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
  4. Season with salt, pepper, and lemon juice. Adjust seasoning to taste.
  5. Serve hot, garnished with fresh cilantro.
