Adas (warm Lentil Salad)
Adas, or Warm Lentil Salad, is a traditional dish in Bukharan Jewish Cuisine that is hearty, flavorful, and nutritious. This dish is perfect for a light lunch or as a side dish for dinner.
Ingredients
- 2 cups green or brown lentils
- 4 cups water
- 1 onion, finely chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
Instructions
- Rinse the lentils and place them in a pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender.
- In a separate pan, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and minced garlic. Cook until the vegetables are soft, about 5-7 minutes.
- Add the cumin, paprika, salt, and pepper to the vegetables. Stir to combine.
- Once the lentils are cooked, drain any excess water and add them to the pan with the vegetables. Mix well to combine.
- Remove the pan from the heat and stir in the fresh parsley and lemon juice.
- Adjust seasoning if needed and serve the warm lentil salad immediately.
