Adas (warm Lentil Salad)

Ingredients

  • 2 cups green or brown lentils
  • 4 cups water
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Instructions

  1. Rinse the lentils and place them in a pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender.
  2. In a separate pan, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and minced garlic. Cook until the vegetables are soft, about 5-7 minutes.
  3. Add the cumin, paprika, salt, and pepper to the vegetables. Stir to combine.
  4. Once the lentils are cooked, drain any excess water and add them to the pan with the vegetables. Mix well to combine.
  5. Remove the pan from the heat and stir in the fresh parsley and lemon juice.
  6. Adjust seasoning if needed and serve the warm lentil salad immediately.
