Ingredients

  • 1 kg chicken thighs, cut into serving pieces
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 1 head garlic, minced
  • 1 onion, chopped
  • 3-5 pieces red chili peppers
  • 1 tablespoon whole peppercorns
  • 3 bay leaves
  • 1 tablespoon cooking oil
  • 1 cup water

Instructions

  1. In a large bowl, marinate the chicken in soy sauce and vinegar for at least 30 minutes.
  2. Heat oil in a pot over medium heat. Sauté garlic and onions until fragrant.
  3. Add the marinated chicken and cook until slightly browned.
  4. Pour in the remaining marinade, water, whole peppercorns, bay leaves, and red chili peppers. Simmer for 30-40 minutes or until the chicken is tender.
  5. Adjust seasoning with salt and pepper if needed.
