Ingredients
- 1 kg chicken thighs, cut into serving pieces
- 1 cup soy sauce
- 1 cup white vinegar
- 1 head garlic, minced
- 1 onion, chopped
- 3-5 pieces red chili peppers
- 1 tablespoon whole peppercorns
- 3 bay leaves
- 1 tablespoon cooking oil
- 1 cup water
Instructions
- In a large bowl, marinate the chicken in soy sauce and vinegar for at least 30 minutes.
- Heat oil in a pot over medium heat. Sauté garlic and onions until fragrant.
- Add the marinated chicken and cook until slightly browned.
- Pour in the remaining marinade, water, whole peppercorns, bay leaves, and red chili peppers. Simmer for 30-40 minutes or until the chicken is tender.
- Adjust seasoning with salt and pepper if needed.
- Serve hot with steamed rice.
