Adyghe Khachapuri (circassian Herb And Cheese Bread)

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup warm water
  • 1 teaspoon active dry yeast
  • 1 cup mixed fresh herbs (such as cilantro, parsley, and dill), finely chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 1 egg, beaten

Instructions

  1. In a large bowl, combine the flour, salt, and sugar. In a separate small bowl, mix the warm water and yeast. Let it sit for 5 minutes until foamy.
  2. Pour the yeast mixture into the flour and knead until a smooth dough forms. Cover the bowl with a kitchen towel and let the dough rise for 1 hour.
  3. Preheat the oven to 400°F (200°C).
  4. In a separate bowl, mix the chopped herbs, feta cheese, and mozzarella cheese.
  5. Divide the dough into 4 equal parts. Roll out each piece into a circle and place a portion of the cheese and herb mixture in the center. Fold the edges of the dough over the filling, creating a boat shape.
  6. Brush the edges of the dough with beaten egg and bake for 20-25 minutes, or until the bread is golden brown.
  7. Serve the Adyghe Khachapuri warm and enjoy!
