Afang Lasagna

Ingredients
- 1 pound ground beef
- 1 cup chopped Afang leaves
- 1 cup chopped spinach
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup tomato sauce
- 12 lasagna noodles, cooked
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat. Add the chopped onion and garlic, and cook until the onion is translucent.
- Stir in the Afang leaves, spinach, beef broth, and tomato sauce. Simmer for 10 minutes, then season with salt and pepper to taste.
- Preheat the oven to 375°F (190°C). Spread a layer of the meat mixture in the bottom of a 9x13 inch baking dish. Arrange 4 cooked lasagna noodles over the meat mixture. Sprinkle with mozzarella and Parmesan cheese. Repeat layers.
- Cover with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 25 minutes, or until the lasagna is bubbly and golden.
- Let the Afang Lasagna cool for 10 minutes before serving. Enjoy!
