Ingredients
- 1 lb boneless chicken thighs

- 1 yellow bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup green olives
- 1/4 cup white wine
- 2 tsp smoked paprika

- Salt and pepper to taste
- 2 tbsp olive oil

Instructions
- Season the chicken thighs with salt, pepper, smoked paprika, and ground cumin.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on both sides. Remove from the skillet and set aside.
- In the same skillet, sauté the onion and garlic until softened.
- Add the sliced bell peppers and cook until they begin to soften.
- Pour in the white wine and let it simmer for a few minutes to reduce slightly.
- Stir in the diced tomatoes and green olives. Return the chicken to the skillet.
- Cover and simmer for 25-30 minutes, or until the chicken is cooked through and the flavors have melded together.
- Garnish with fresh parsley before serving.
