Afghan Rice Pudding (Shola-e-Zard)
Shola-e-Zard is a traditional Afghan rice pudding that is flavored with cardamom and garnished with nuts. It is a popular dessert in Pashtun cuisine and is often served during special occasions and celebrations.
Ingredients
- 1 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/2 teaspoon ground cardamom
- 2 tablespoons chopped mixed nuts (pistachios, almonds, and cashews)
- 1 tablespoon rose water (optional)
Instructions
- In a heavy-bottomed pot, bring the milk to a gentle boil over medium heat.
- Add the rice and reduce the heat to low. Simmer, stirring occasionally, for 30 minutes or until the rice is soft and the mixture has thickened.
- Stir in the sugar, cardamom, and rose water (if using). Cook for an additional 5-10 minutes until the sugar is dissolved and the pudding is creamy.
- Remove from heat and let it cool slightly.
- Divide the pudding into serving bowls and garnish with chopped nuts.
- Serve warm or chilled.
