Afghan Rice Pudding (Shola-e-Zard)

Ingredients

  • 1 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons chopped mixed nuts (pistachios, almonds, and cashews)
  • 1 tablespoon rose water (optional)

Instructions

  1. In a heavy-bottomed pot, bring the milk to a gentle boil over medium heat.
  2. Add the rice and reduce the heat to low. Simmer, stirring occasionally, for 30 minutes or until the rice is soft and the mixture has thickened.
  3. Stir in the sugar, cardamom, and rose water (if using). Cook for an additional 5-10 minutes until the sugar is dissolved and the pudding is creamy.
  4. Remove from heat and let it cool slightly.
  5. Divide the pudding into serving bowls and garnish with chopped nuts.
  6. Serve warm or chilled.
