African Chicken (Frango à Africana)

Ingredients

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon white vinegar
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the soy sauce, olive oil, minced garlic, paprika, cayenne pepper, brown sugar, white vinegar, salt, and pepper.
  2. Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Heat a grill or grill pan over medium-high heat. Grill the chicken thighs for 6-8 minutes on each side, or until fully cooked and charred in spots.
  4. Remove the chicken from the grill and let it rest for a few minutes before serving.
