Frango à Africana, or African Chicken, is a popular dish in Macanese cuisine, which is a unique blend of Chinese and Portuguese flavors. This dish features tender chicken marinated in a flavorful, spicy sauce, and then grilled to perfection.
Ingredients
- 4 chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 tablespoon brown sugar
- 1 tablespoon white vinegar
- Salt and pepper to taste
Instructions
- In a bowl, mix together the soy sauce, olive oil, minced garlic, paprika, cayenne pepper, brown sugar, white vinegar, salt, and pepper.
- Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Heat a grill or grill pan over medium-high heat. Grill the chicken thighs for 6-8 minutes on each side, or until fully cooked and charred in spots.
- Remove the chicken from the grill and let it rest for a few minutes before serving.
