Ingredients

  • 1 cup couscous
  • 1 1/2 cups water

  • 1 bell pepper, thinly sliced
  • 1 cup shredded cabbage
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • 4 large lettuce leaves

Instructions

  1. In a saucepan, bring the water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  3. Add the tomatoes, bell pepper, and shredded cabbage to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
  4. Stir in the cooked couscous and chopped cilantro. Season with salt and pepper to taste.
