Ingredients
- 1 cup couscous
- 1 1/2 cups water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 tomatoes, diced
- 1 bell pepper, thinly sliced
- 1 cup shredded cabbage
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 4 large lettuce leaves
Instructions
- In a saucepan, bring the water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
- Add the tomatoes, bell pepper, and shredded cabbage to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Stir in the cooked couscous and chopped cilantro. Season with salt and pepper to taste.
- To assemble the wraps, place a scoop of the couscous and vegetable mixture onto each lettuce leaf. Roll up the leaves and secure with toothpicks, if needed.
