Ingredients

  • 1 cup dried cassava (Abacha)
  • 1 cup ugba (fermented African oil bean seeds)
  • 1 medium onion, thinly sliced
  • 1 large tomato, diced
  • 1/2 cup garden egg, diced
  • 1/4 cup chopped utazi leaves (Gongronema latifolium)
  • 1/2 cup palm oil
  • 1/4 cup ground crayfish
  • 1 teaspoon ground chili pepper
  • Salt to taste
  • 1/4 cup roasted peanuts, crushed

Instructions

  1. Soak the dried cassava (Abacha) in cold water for 10 minutes, then drain and set aside.
  2. In a large bowl, combine the soaked cassava, ugba, sliced onion, diced tomato, diced garden egg, and chopped utazi leaves.
  3. In a small bowl, mix the palm oil, ground crayfish, ground chili pepper, and salt to make the dressing.
  4. Pour the dressing over the cassava and vegetable mixture, and toss gently to combine.
  5. Sprinkle the crushed roasted peanuts on top before serving.
