African Salad (abacha Delight)
African Salad, also known as Abacha Delight, is a popular dish in Niger cuisine. This refreshing and flavorful salad is made with cassava, vegetables, and a tangy dressing, making it a perfect choice for a light and satisfying meal.
Ingredients
- 1 cup dried cassava (Abacha)
- 1 cup ugba (fermented African oil bean seeds)
- 1 medium onion, thinly sliced
- 1 large tomato, diced
- 1/2 cup garden egg, diced
- 1/4 cup chopped utazi leaves (Gongronema latifolium)
- 1/2 cup palm oil
- 1/4 cup ground crayfish
- 1 teaspoon ground chili pepper
- Salt to taste
- 1/4 cup roasted peanuts, crushed
Instructions
- Soak the dried cassava (Abacha) in cold water for 10 minutes, then drain and set aside.
- In a large bowl, combine the soaked cassava, ugba, sliced onion, diced tomato, diced garden egg, and chopped utazi leaves.
- In a small bowl, mix the palm oil, ground crayfish, ground chili pepper, and salt to make the dressing.
- Pour the dressing over the cassava and vegetable mixture, and toss gently to combine.
- Sprinkle the crushed roasted peanuts on top before serving.
