Afro-Fusion Feast (Thiébou Tchep Bu Yapp)

Ingredients
- 2 cups of jasmine rice
- 1 pound of bone-in lamb or beef
- 1 cup of tomato sauce
- 1 onion, chopped
- 2 carrots, sliced
- 1 eggplant, diced
- 1 cabbage, cut into wedges
- 4 tomatoes, sliced
- 1 scotch bonnet pepper, whole
- 1 cup of peanut oil
- 1 tablespoon of tomato paste
- 1 teaspoon of thyme
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Season the meat with salt, pepper, and garlic powder.
- In a large pot, heat the peanut oil over medium heat and brown the meat on all sides. Remove the meat and set aside.
- In the same pot, sauté the onions, carrots, eggplant, and cabbage until slightly softened.
- Add the tomato sauce, tomato paste, thyme, and scotch bonnet pepper to the pot. Stir to combine.
- Return the browned meat to the pot and add enough water to cover the ingredients. Simmer for 30 minutes.
- Add the rice and tomatoes to the pot, and continue to simmer for an additional 20 minutes, or until the rice is cooked and the meat is tender.
- Adjust the seasoning with salt and pepper, then serve hot.
