Afro-Fusion Feast (Thiébou Tchep Bu Yapp)

Ingredients

  • 2 cups of jasmine rice
  • 1 pound of bone-in lamb or beef
  • 1 cup of tomato sauce
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 eggplant, diced
  • 1 cabbage, cut into wedges
  • 4 tomatoes, sliced
  • 1 scotch bonnet pepper, whole
  • 1 cup of peanut oil
  • 1 tablespoon of tomato paste
  • 1 teaspoon of thyme
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  1. Season the meat with salt, pepper, and garlic powder.
  2. In a large pot, heat the peanut oil over medium heat and brown the meat on all sides. Remove the meat and set aside.
  3. In the same pot, sauté the onions, carrots, eggplant, and cabbage until slightly softened.
  4. Add the tomato sauce, tomato paste, thyme, and scotch bonnet pepper to the pot. Stir to combine.
  5. Return the browned meat to the pot and add enough water to cover the ingredients. Simmer for 30 minutes.
  6. Add the rice and tomatoes to the pot, and continue to simmer for an additional 20 minutes, or until the rice is cooked and the meat is tender.
  7. Adjust the seasoning with salt and pepper, then serve hot.
