Agnello All'abruzzese: Abruzzese Lamb Stew

Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 1 sprig of rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the onion, carrots, and celery. Cook for 5 minutes until the vegetables start to soften.
  3. Add the minced garlic and cook for another minute.
  4. Pour in the red wine and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pot.
  5. Return the lamb to the pot and add the beef broth, bay leaves, and rosemary. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the lamb is tender.
  7. Remove the bay leaves and rosemary sprig before serving. Enjoy the Agnello all'Abruzzese hot with crusty bread or over creamy polenta.
