Agnello All'abruzzese: Abruzzese Lamb Stew
Agnello all'Abruzzese, or Abruzzese Lamb Stew, is a traditional dish from the Abruzzo and Molise regions of Italy. This hearty stew is packed with tender lamb, aromatic herbs, and vegetables, making it the perfect comfort food for a cozy night in.
Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 cup red wine
- 2 cups beef broth
- 2 bay leaves
- 1 sprig of rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the onion, carrots, and celery. Cook for 5 minutes until the vegetables start to soften.
- Add the minced garlic and cook for another minute.
- Pour in the red wine and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pot.
- Return the lamb to the pot and add the beef broth, bay leaves, and rosemary. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the lamb is tender.
- Remove the bay leaves and rosemary sprig before serving. Enjoy the Agnello all'Abruzzese hot with crusty bread or over creamy polenta.
